  • ClumpingNormal — and a good sign. There’s no anti-caking agent in here. Break it up with a spoon.
  • Best storedAirtight, away from the stove. It draws in moisture from steam.
  • In bakingSwaps for refined sugar measure for measure. It browns a little faster, so check a few minutes early.

Good to know — To prevent curdling, don’t add sugar to boiling milk.

Why this page says more than the pack

Under India’s labelling rules, when an ingredient is itself made of several things and makes up less than 5% of the finished product, its contents don’t have to be listed. That’s how “spices and condiments” ends up on so many packs — one line standing in for a dozen ingredients nobody outside the factory ever sees.

There’s a second rule too. An additive that arrives inside a bought-in ingredient — a preservative in a paste, say — doesn’t have to appear on the label at all, as long as it isn’t doing a job in the finished food. It’s why you’ll see “no added preservatives” so often. The word doing the work is added.

We’re not accusing anyone of breaking the rules. But we’d rather not use them. Our dates powder carries a little rice flour to stop it clumping, so we print it. Our baking powder is cream of tartar rather than a phosphate, so we print that too. If it’s in the food, it should be on this page.

Questions parents ask us

If there are no preservatives, how long does it actually last?

Every pack carries a best-before date, and unopened, it holds to that date. What changes faster is texture after opening — a baked crispie without preservatives softens in air more quickly than a fried, preserved one. It’s still perfectly good to eat; it’s just at its best sooner. That’s the trade we’ve made.

There’s oil in the namkeen. I thought it wasn’t fried?

It isn’t. The rice bran oil is a light spray applied so the masala has something to hold on to. Conventional namkeen is deep-fried and soaks up a great deal of oil in the process; ours is baked and then dressed. Compare the fat per 100 g on our pack with any fried namkeen and the difference is plain.

Why coconut sugar instead of regular sugar?

It’s less processed and stays closer to its natural form, which is the whole principle we build on. It also tastes faintly of caramel, which is why our cookies taste the way they do. We use it in everything, and we sell it on its own for your kitchen.

My child has an allergy. What should I check?

Each product above lists what it contains. Please read that list rather than relying on the product name — our coconut cookies contain peanuts, and our cookies contain dairy butter. If anything is unclear, write to us before you serve it and we’ll answer the same day.

Why do batches taste slightly different?

Because we make in small batches with whole ingredients rather than standardised ones. Ragi from one harvest isn’t identical to the next, and we don’t use flavourings to paper over it. Within a batch it’s consistent; across a year, it moves a little.
